Petite Crimson (Lens Esculenta) are 1/2 cm. wide with a mild, earthly flavor and soft texture. Crimson Lentil are "crimson" in color which is a deep orange - red. This tiny lens shaped pulse has traditionally been used as a meat substitute (a pulse is the dried seed of any legume, such as beans and peas). Lentils are the seed of a small shrub and are dried after harvesting. Lentils have been eaten for over 8,000 years and originated in Southwestern Asia along the Indus river. They are a staple food for many South Asian cultures. The Latin word for Lentil, Lens, was used in the 17th century to describe eye glasses because of the similarity in shape. 



Suggested Uses

Perfect for thickening soups and stews, Petite Crimson Lentil’s quick cooking nature is ideal for salads


and to stuff vegetables. Lentils are often cooked with curry spices and served with rice. Try mixed


with couscous as a bed for seafood or poultry.


Cooked, chilled lentils may be reheated by sauting with aromatic vegetables or curry, fresh herbs,


reheated quickly in a convection steamer, microwaved, or added to rice, grain or bean blends.


Basic Preparation

Carefully sort lentils and rinse thoroughly. Bring 4cups water to boil in saucepan. Slowly stir in 1 cup

lentils. Reduce heat to a simmer. Cook until lentils are still firm but cooked through, about 5 minutes.

Do not overcook. Drain lentils and rinse with cold water. Season with salt. Refrigerate until serving.
