Suggested Uses

A traditional ingredient in Indian cooking often used in curries, mung beans can also be sprouted and

added to salads and sandwiches. To sprout, place beans between layers of damp cheesecloth, place

in a dark place for about 2 days.

Basic Preparation

Mung beans can be soaked overnight and then boiled for 30 minutes; unsoaked rinsed beans can be

boiled for 50-60 minutes. One cup of dry will yield 2 cups of cooked beans.
