Beluga’s make a good choice for delicately spiced soups such as a black lentil soup and they meld
perfectly with vinaigrettes and marinades to make salads. For stuffed red peppers or eggplant, mix
with bread crumbs, minced onion and garlic. Use in vegetarian cooking as a meat substitute.

Basic Preparation

Carefully sort lentils and rinse thoroughly. Add 1 cup of lentils to 4 cups of water. Bring to a boil,
then reduce heat to a simmer. Cook for 15-20 minutes. skimming any foam from water. Yields 2 cups
