Adzuki Beans are small, oval beans that are reddish-brown in color and have a strong nutty, sweet

flavor and firm texture. They are known to be low in fat and high in protein. Their bold red color

makes them unique and when steamed with rice, turns the rice a gorgeous pink color. 

 

Suggested Uses

Steam Adzuki Beans with rice to create a gorgeous pink colored Festival Rice. Simmer beans with

lentils and vegetables for a hearty stew or add them as protein to vegetarian entrées. Add texture to

fried rice dishes or stir-frys. This bean is commonly used in Asian cuisine and in Japan, Adzuki beans

are used in confections.

Basic Preparation

Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3

minutes, reduce heat and simmer, covered, for 35-45 minutes until tender. One cup dry yields 3 cups

cooked.
